*GENERAL PURPOSE:*
The Diet Technician / Dietary Manager is responsible and accountable for completing day to day operations of the dietary department as well as working with the Licensed / Registered Dietician to provide nutritional services, while ensuring that we are meeting requirements and maintaining compliance with applicable laws, regulations and Health Department codes for healthcare facility dietary operations and sanitation requirements
*QUALIFICATIONS:*
* Associate degree in Dietetic Technology from an ADA accredited program
* Registered Dietetic Technician
* Experience in food service management in a health care setting preferred
* Friendly disposition and effective communication skills with both staff, families, and residents
* Must be able to work under minimal supervision
* Must be able to perform supervisory duties that require frequent independent decisions
* Exhibit good computer skills and be open to learning new skills with technology
*ESSENTIAL JOB FUNCTIONS:*
*Daily:*
* Performs rounds in kitchen to observe correct production and sanitation is being carried out (several times daily at differing, random times)
* Verify and update diet and supplement changes with nursing
* Change meal tray cards and make new tray cards daily and as needed
* Update dining location list with room changes (or appointment) for meal distribution in collaboration with facility clinical leadership
* Update resident food preference book for cooks
* See new and re-admitted residents for orientation to diet and food preferences
* Gather initial information for nutritional assessment from resident
* See residents/family members for revised preferences and requests
* Update snack and substitution lists regularly and create copies for resident rooms
* Monitor portion sizes served for quality and overproduction
* Check and revise employee schedule as needed, ensuring all positions and shifts are covered or devise a plan for coverage
* Perform meal time rounds to observe resident meal service, satisfaction, and substitutions
* Enter expenses on Food Service Monthly Budget Sheet.
Submit to Administrator by the first week of each month for the prior month’s expenses * Cover employee breaks on the floor in the department * Cover call-offs, open shifts in schedule or any gaps in coverage on the floor if alternative coverage cannot be found *Weekly:* * Responsible for assessing prices of several items including Raw Food, Supplies and Supplement costs.
Compare pricing among approved vendors to ensure we are maximizing our cost effectiveness * Work with DON and other clinical leadership to update seating chart to maximize resident’s dining experience and intake potential * Update the main diet list and print * Update the adaptive ware list and print * Update weekly spreadsheets as needed for menu and production changes and print.
Collaborate with Dietitian * Make and update product Pull & Prep sheets for cooks * Conduct weekly QA surveys concerning Food/Tray temperatures, meal correctness, time of service, and sanitation surveys * Preparing and conducting monthly in-service topics for department staff.
Hold and lead department meetings as needed to communicate important information and assess staff morale * Ensure working condition of equipment * Ensure staff is following proper safety protocols and precautions for both dietary specific safety protocols and Infection Control and Prevention protocols.
Collaborate with clinical leadership on IP&C protocols as they change * Monitor cleaning schedules *OTHER DUTIES:* * Complete inventory of all Raw Food items, supplies and supplements prior to ordering new inventory * Complete Food, Supplies and Supplement orders according to our ordering schedule * Communicate with food service vendors over delivery/item issues and any other reason where communication with vendors in necessary, including local vendors in the community * Ensure all deliveries are accurate, logged and dated, and put away/stored in appropriate storage areas correctly * Notify maintenance of any repairs needed in kitchen via Maintenance Request Forms and direct communication with Maintenance staff when needed * Assist in planning for special events/functions such as resident birthdays/setting up birthday meals, and holidays.
Attend event planning meetings as they arise * Assure dietary department meets all local, state, and federal regulations * Create, revise, update and communicate the department’s employee schedule monthly.
Update and communicate with staff as scheduling needs change * Monitor staff hours and maintain bi-weekly personnel hour allotments and budgets, keeping Overtime at a minimum.
Communicate all extra hours and overtime needs to Administrator and payroll department.
Assist payroll with ensuring accuracy of staff hours during each pay period * Communicate department staffing needs with HR Department.
Contact applicants as needed.
* Interview new and prospective employees * Oversee and assist with orientation, training, and evaluation of all employees * Develop and revise work flow sheets * Develop, update and monitor cleaning schedules * Attend resident Care Conferences weekly and as scheduled * Attend Daily Morning Stand up meetings * Attend Department Head or various other meetings as they are called by Administrator and/or other facility leadership * Complete nutritional assessments * Develop/edit care plans * Input progress notes * Document diet and supplemental changes in progress notes * Follow up on Dietician’s recommendations and verify orders in chart * Document discharge to hospital in chart * Gather pertinent medical information on new admissions and complete the appropriate assessment form _*This is not a full and complete list of all necessary job functions.
